* 3/4 c. flour
* 3/4 c. whole wheat flour
* 2/3 c. toasted wheat germ
* 1/2 c. sugar
* 1/2 c. coconut
* 1-1/2 tsp. baking soda
* 1/2 tsp. salt
* 1 c. sour cream
* 2 eggs
* 1 can (11 oz.) mandarin oranges, drained
* 1/2 c. chopped nuts
1. In large bowl, stir together dry ingredients.
2. Blend sour cream, eggs and oranges in small bowl. Stir orange mixture and nuts into dry ingredients until all ingredients are evenly blended.
3. Spoon into buttered muffin cups, filling 3/4 full. Bake at 400° F for 18 to 20 min.. Remove from muffin tin and cool.
